Although the majority of rooms at the historic Sierra Sky Ranch Resort on Highway 41 just north of Oakhurst opened in March, the 42-seat Branding Iron Steakhouse & Saloon swung its doors open to the public last Saturday.
After being closed for nearly two years, Sky Ranch underwent a major renovation after being purchased by Aung Oo, who purchased Fish Camp’s Narrow Gauge Inn in 2011.
Sky Ranch offers 16 newly decorated rooms, complete with complimentary Wi-Fi, flat screen televisions, new carpeting, redesigned and decorated bathrooms, and central air conditioning and heating. An additional 10 rooms in the ‘bunk house’ will be completed in the near future.
Andrew Wooten is the general manager, and Caryl Carper is serving as director of sales and special events.
Newly hired Executive Chef Greg Carroll oversees both the Sky Ranch and the Narrow Gauge kitchens.
With a 30-plus year career in the hospitality and restaurant business, Carroll, a member of the American Culinary Federation, brings a wealth of experience to the two restaurants.
From his first executive chef position in 1983 at the Mayfair House in Coconut Grove, Florida, his talents have taken him to the Dominican Republic, Russia, Puerto Rico, and the Bahamas, as well as the Doral Country Club in Miami Beach, where he was responsible for two upscale restaurant, two casual restaurants, room service for 450 rooms, 1,000 seat banquet room, and 30 pool-side cabanas.
Appetizers on the new Sky Ranch Branding Iron Steakhouse & Saloon menu include a seafood platter of jumbo prawns, New Zealand mussels, crab legs, smoked salmon and caviar - sirloin beef carpaccio with baby arugula, Asiago cheese and truffle oil.
Entrees, which cost $24 to $38, include angus filet of beef Wellington, New Zealand rack of lamb, free range breast of chicken, Pacific King Salmon, and a cowboy cut rib eye steak.
The Saloon side of the restaurant offers a few craft cocktails (The Duke and Stubborn ol’ Mule), domestic and imported beers (Sierra Nevada IPA, Yosemite Pale Ale), and nearly 30 wines by the glass or by the bottle.
